Green pumpkin salad is a super-food salad filled with green goodness. And pumpkin. I either boil or roast the raw pumpkin for 5-10 minutes until tender. Together with the pumpkin seeds the green (brownish) lentils make sure that the salad gives you protein and fills you up. I might eat this salad as a light lunch but I suggest to use it as a side to a bigger dish - for example to my Paleo Pizza (in my opinion the "salad side" should take up half your plate).
2 kinds of green salad/kale (iceberg, rocket, green kale)
1 green capsicum
150 g of snow peas or green string beans or fresh wasabi beans
1/2 a cucumber
Fresh basil or coriander
150 g of green lentils (in Shanghai they are easy to find canned and ready to use)
100 g of pumpkin flesh
50 g of pumpkin seeds
Chop up your greens and throw in a nice bowl. Chop celery, capsicum and cucumber in similar small pieces and add to your leaves. Add lentils.
Chop up pumpkin flesh and roast or boil for 5-10 minutes. Cool it down and add on top of your salad.
Roast pumpkin seeds on a dry pan and pour over your salad.
Finish with a dash of olive oil
