I love making, eating & sharing hummus. It's such a delicious and healthy snack. Use it as a dip, a spread or salad dressing.
Recently I'm getting into trying new sorts of hummus by adding new ingredient to my hummus "base". Have you been to Pure & Whole cafe in Shanghai? Otherwise you should try it! They offer a wide range of "Dips" and I am so inspired by their selection.
Healthy Hummus in Shanghai?
I currently buy imported canned ready-to-eat chickpeas in supermarkets like Parksons or City Super (approx. RMB 11/a can which makes a good portion). I have previously bought Chinese chickpeas at my local veggie market but recently they haven't had them. They are super cheap but needs to be soaked for 8-12 hours before use (remember to soak in drinkable water and throw any remaining water out before boiling them for approx. 30 minutes).
Chickpeas are a good and healthy source of protein (approx. 19g/100 g - chicken contains approx. 24g/100g) which makes hummus a super healthy and filling snack. In moderation - chickpeas also contains a lot of energy and when made into hummus a lot of (good) fat!
Here's my recipe for Peanut Hummus with Fresh Chili - perfect as a snack for a get-together with vegetable sticks or you can try to make my healthy bread crackers which are such a good match with this hummus.
1 can of chickpeas (approx. 240 g) "ready-to-eat"
1/2 - 1 dl of olive oil
1/2 dl of water
2-4 cloves of garlic
Freshly squeezed lemon juice
Dash of salt & peper
50 g of natural peanuts (or salted but then omit any other salt)
1-2 seedless chili
Add ingredients to your blender or food processor. Start with 1/2 dl of olive oil and 1/4 dl water, blend shortly, stir and add more liquids if necessary. I recommend you to do the same procedure with chili and garlic in order to reach the right amount - we all have different taste preferences right. My boyfriend says I like chili too much. And Garlic yuuuum!
Add a couple of whole peanuts on top and serve cold
